Pandan Mango Coco Madeleine - PS' Favorite: I LOVE pandan! Ever since Yao made me try this South East Asian leaf I have been addicted to it. My problem: most of the pandan-flavored bakes you find in the City are made with artificial extract... It's easy to spot them, they display this signature fluo-green color that looks quite unnatural (well, for a reason!).
It took us many many trials and errors and ultimately meeting with a French-Viet chef during one of our trips to Paris (educational trip of course...) to finally be able to create the best pandan creme patissiere: not too sweet, not too grassy or bitter yet super flavorful!
We complemented it with a hint of home made mango jam and some shredded coconuts in the madeleine batter and ... VOILA!
